Virginia M. Kropf, 92, co-founder of Fritz's Railroad Restaurant, went to be be with her Lord on Saturday evening, May 12, 2018. Funeral Services will be 7:00 p.m. Thursday, May 17 at Victory Hills Church of the Nazarene, 6200 Parallel, Kansas City, KS where the visitation will be held from 5-7 p.m. Graveside services will be at 9 a.m. Friday, May 18 at the National Cemetery, Leavenworth, KS. Memorial contributions are suggested to Victory Hills Church of the Nazarene. Virginia was born April 22, 1926, in Kansas City, KS and was a 1942 graduate of Wyandotte High School. In 1943 she married Daniel J. Collins and they were blessed with 2 children, Dan and Patricia. After the death of Daniel she married Frederick "Fritz" Kropf on May 18,1952 and he took on the fatherly role to her two children, In 1954 they opened the first of four Fritz's Restaurants at 32nd and Brown. In 1967 they opened their second location at 250 N. 18th, with locations in Crown Center and Shawnee to follow. Virginia remained active at Fritz's until retiring in 2017. She was a founding member of Victory Hills Church and if the doors were open she was there. She was involved with the Choir, Sunday School Teacher, Women's Missions President, Church Board member, Caravan leader, faithful Food Pantry volunteer and was honored with the Church's Distinguished Service Award. She was preceded in death by her husbands Daniel and Fritz, her brother Walter Cook and her grandson Joel Reed. Virginia is survived by five children and their spouses, Dan and Carol Collins, Patricia Zell, Jodie Green, Annette and Lloyd Pollard, Fred and Mary Kropf and numerous grandchildren, great grandchildren, great great grandchildren and countless friends.
